Today’s recipe: Creamy chicken tomato pasta with fresh basil and Parmesan

Comfort Food: The perfect harmony of flavours and textures!


500g Fatti’s and Moni’s Fusilli screws

4 PnP Greengrocer tomatoes, diced

200g PNP Greengrocer mini plum tomatoes. Halved

1 Tbsp. (15ml) canola oil

1 red onion, finely chopped

2 tsp (10ml) chili flakes

1 tsp (5ml) smoked paprika

3 sprigs of thyme

2 cups (500ml) cream

500g deboned chicken thighs/ breast, cubed

Salt and pepper for seasoning

½ cup (125ml) freshly chopped basil leaves

50g shaved Parmesan cheese


In a large frying pan, heat and the oil and sauté the onion and garlic for minutes, add the chili, flakes, tomatoes, smoked paprika and thyme and continue to fry for 5 minutes. 

Add the cream and simmer for 5 minutes, add the chicken and simmer for a further 10 minutes.

Season with salt and pepper.

Cook the pasta as per packet instructions and set aside the cooked pasta.

Toss the pasta into the creamy tomato sauce, along with the basil.

 Serve topped with grated Parmesan and enjoy.
