Today’s recipe: sweet potato nachos

Load sweet potato chips with your favourite toppings for a wholesome spin on traditional nachos.

INGREDIENTS

2 packets (500g each) PnP Let’s Cook sweet potato chips

Glug olive oil

Salt and milled pepper

1 jar (200g) PnP chunky mild salsa

1–2 cups (125–250g) cheddar cheese, grated 

For serving:

Handful fresh corianderLime wedges

METHOD

Preheat oven to 200°C.

Toss sweet potatoes with oil.

Season.

Roast for 30 minutes, or until well browned and tender.

Top with salsa and scatter with cheese.

Return to oven for another 5–8 minutes.

Serve topped with fresh coriander and lime wedges on the side.
