Diabetic friendly 4-ingredient peanut butter cookies

A delicious cookie, suitable for diabetic

 INGREDIENTS

1 cup (250ml) PnP Live Well smooth peanut butter

¾ cup (150g) Sweetly baking sugar substitute

1 egg, whisked1 tsp (5ml) vanilla essence

METHOD

Preheat oven to 180°C.

Add all ingredients to a mixing bowl and mix until well combined.

Using a measuring spoon, scoop 2 Tbsp (30ml) of mixture and roll into balls.

Place on a lined baking tray and flatten with a fork, creating a criss-cross pattern.

Bake for 15 minutes at 180°C until starting to brown in colour slightly.

Cool on baking tray for 2-3 minutes, then cool completely on a wire rack to crisp up.

Store in an airtight container for up to 2 weeks.
